Tu Do offers a full array of standard Chinese cuisine, but it’s the hot pots that people come for. Unshelled shrimp, sliced chunks of catfish and numerous unusual vegetables are placed in the huge, heated pot with hand-held wire baskets. The finished product is then ladled into bowls. The whole ritual has a communal feel to it; its closest Western analog might be fondue. Dinner for one:
