The incredible replaceable egg

I recently baked cookies for some omnivores, and despite their initial hesitation, they were surprised at how good they tasted and how chewy they were sans eggs. Ener-G Egg Replacer can take the credit for that. It’s a reliable substitution, but it’s not the only option. You can make your own version with tapioca flour, corn starch, potato starch and xanthan gum (recipe at www.goodbaker.com/qa11.html). Or, for a more nutritious alternative, replace one egg with 2 tablespoons of ground flax seed or 1 tablespoon of ground chia seeds mixed with 3 tablespoons of water. One-quarter cup of applesauce, banana or puréed silken tofu are other possibilities. Experiment with all, and happy baking!
