My yardstick for measuring Mexican food is pork cooked al pastor style. This marinated, barbecued preparation is rarely found, and it’s even more rare to find it prepared authentically, as it’s done all over Northern Mexico. El Portal, I’m happy to report, has a great taco al pastor. Dinner for one:
