Sweetmeat for vegans
Sweetbread has nothing to do with baked goods; it’s the thymus gland or pancreas of a lamb or calf. Totally not vegan. Ironically, sweetmeat—literally sweet confections or pastries, including sweet bread (two words)—can be animal-ingredient-free. For example, prianiks, Russian-style gingerbread, are usually spiced with cinnamon, nutmeg, cardamom and cloves, and have a light sugary coating. While some recipes include honey and eggs, Helen Bakery’s do not. For less than $3 a package, you’ll get a dozen palatable 3-inch-diameter cakes.
