Squeaking between the teeth
It squeaked with every mastication. Although the flavor of this homemade version of Thai eggplant basil was that familiar spicy, salty yet sweet amalgam of the Thai-restaurant standard, the cooking time for the eggplant in the recipe was inadequate. Noisy-eggplant inadequate. Otherwise, this recipe from Vegetarian Times (www.vegetariantimes.com/recipe/thai-spicy-eggplant-with-sweet-basil) was easy and quick, because as long as an alteration is made to improve the texture of the eggplant, it’s actually kind of impressive. And being responsible for cooking eggplant that’s so tender that it melts in between the palate and the tongue—that does seem more appealing than squeaking between the teeth, doesn’t it?
