Bean sprouts
Hairy tangles of bean sprouts evoke a crunchy granola vibe, but our hippie relatives ate them for a reason. Sprouts and shoots are the babiest of plants, and they contain all the promise of the mature produce to come. That means lots of vitamins and nutrients. If you don’t want to put edible silly string on your sandwich, try topping risotto or pasta with a handful of broccoli or pea shoots. Toss bean sprouts into stir-fries at the last minute, just to warm them through. For a subtle zing, snip micro chives onto food as a final garnish.
