Peaches and dream
Bite into a sun-ripened peach just picked from a tree, and a liquid ribbon of sweetness wraps around your tongue—and sometimes escapes to run down your chin, too. Now, multiply that by 10 pounds: That's what I've got waiting for me at home, thanks to the generous branches of a friend's tree. What to do with the bounty? I'm freezing slices of it for future perfect-consistency smoothies, dehydrating some to enjoy in the fall and making peach cobbler with the rest. For the dreamiest cobbler, try combining 1 cup of flour, half-a-cup of sugar, 1 teaspoon of baking powder, half-a-teaspoon of salt, 1 stick of vegan butter and half-a-cup of boiling water. Pour the batter over four or five sliced peaches and bake at 350 degrees until golden brown. It's just peachy.
