Skool on K refers to its new weekly special as an “Okinawa-style ramen pop-up.” I’m not sure if offering a certain dish every Thursday qualifies as a pop-up, or even if Okinawa soba qualifies as ramen, but it’s worth checking out regardless. For $13, you get pale wheat noodles in a clear, clean-tasting broth made of pork bones and dashi. There’s soft-boiled egg, bok choy and massive cubes of fatty, luscious pork belly, braised for 24 hours. The lightness of the soup offsets the richness of the toppings, creating a balanced bowl you can’t find anywhere else in Sacramento. 2319 K Street, http://skoolonkstreet.com.
