Easter Egg radish
We may be past Easter, but spring farmers markets are the place to find the Easter egg radish. Beautiful orbs in a rainbow of pastel colors, this variety makes a lovely addition to salads. Other types of radish are abundant now as well; ask for a taste if you're concerned about spiciness. If you do acquire especially zingy radishes, thinly slice and soak them in ice water for a few hours—they'll lose some of their bite. A classic French snack is to slip a little nugget of high-quality butter between slices of radish and sprinkle them with fleur de sel. Bon appétit!
