Just add water
Being vegan is not hard. The key is to know what you're eating, especially when it comes to processed foods. Frankly, everyone should be in the habit of reading labels. When I first read the nutritional-facts label on Nile Spice’s Red Beans & Rice Soup, I was impressed: 10 grams of protein, 15 percent of the daily value of iron, 8 percent of calcium, 39 percent of fiber, only 1 gram of fat and 170 calories. To boot, this just-add-boiling-water meal is less than $2 (it's sold at most grocery stores). That equals a great deal. Oh, yeah, it's also excellently spiced and unbelievably delicious for food that comes in a paper cup. Thought that might be important, too.
