To properly serve a pummelo can be a delicate and time-consuming matter. For if this chore is neglected, and if the pith remains clinging to the fruit, then 2,100 years of breeding and 18 months on the branch will be wasted, and the mighty pummelo, sweet yet too often misunderstood, will taste like nothing but a grapefruit.
