I was under the impression that the cocktail world was done with egg whites—a coda of a cocktail style that faded in the early '80s. Recently at Grange, I was pleased to learn that wasn't quite true after all. Take Amy's Wedding ($13), a wholly unique cocktail that eschews the Pisco Sour and Ramos Gin Fizz. It starts with vodka infused with lavender and vanilla, then lime, herbaceous Galliano and an incredibly silky egg-white foam.
