Cooking fish with Hank Shaw
Hooked a fish lately? I asked Hank Shaw, who writes the blog Hunter Angler Gardener Cook (www.honest-food.net), for advice on how to cook it:
“Probably the two fish that people catch are trout and rockfish. The best way to cook and eat those fish is whole.
“Rockfish are good on the grill. Make vertical slashes alongside the side of the fish, perpendicular to the length of fish. Paint with olive oil [and] salt and grill. Afterwards, put chimichurri on it, mustard or anything, but don’t put it on the fish while it’s grilling because it will burn.
“Stuff the cavity. I have a recipe on my Web site for stuffed, grilled sardines with bread crumbs, olive oil, parsley and garlic. Pulse [them] in a food processor, stuff the fish, paint grape or fig leaves with olive oil, get the fish and leaves nice and oily, wrap the fish in leaves and grill, seam side down first.”
