Cheesy rejection

I’ve encountered so many people who said they would be vegetarian but just can’t give up cheese. It didn’t bother me: Cheese is stinky, gives you phlegm and a case of the bloats. Additionally, cheddar cheese is made with rennet, an enzyme extracted from the stomachs of a baby cows. Poor babies. Vegan cheese substitutes aren’t usually tasty, but then there’s Daiya “cheese” in cheddar and mozzarella flavors. The good news is it’s made without soy, and when melted, tastes really cheesy.
