Beyond salmon

We all know we should eat more seafood, but it’s easy to get stuck in a rut. Danny Johnson, Taylor’s co-owner and fish buyer, shares his top picks for underappreciated seafood:

1. Black cod
Soak it in miso and then grill it. “Some of the best fish you’ll ever eat.”

2. Skate wings
Sauté with garlic and olive oil; a great alternative to petrale sole.

3. Green-lipped mussels
Steam with garlic, broth and fresh herbs.

4. Bluenose sea bass
You can do anything with it: grill, bake or broil. A good alternative to overfished Chilean sea bass.
