If you want to make coffee in this town, you better know what the hell you’re doing. A quick sampling of the beans at Identity Coffees shows that its team of baristas-slash-sourcers-slash-roasters at the very least has a fighting chance. From Dipilto, Nicuaragua, the Finca la Joya beans ($11 for a half-pound) have a solid, earthy taste, giving them a round and smooth nuttiness while holding on to a certain sweetness.
